2 Easy Crock Pot Meals For Your Next Fancy Dinner

Planning a dinner for a group of people, whether small or large, is not easy, especially if you plan to serve special and fancy dishes. Let your slow cooker help you – you will be able to save a lot of time and energy and still be able to serve five-star dishes.

Impress your guests with these easy crock pot meals that are perfect for a fancy dinner:

Crock Pot Duck Confit

What you need:

  • 6 whole duck legs, rinsed and dry

  • 8 fresh thyme sprigs, leaves stripped

  • 3 bay leaves, lightly crushed

  • 5 1/2 dl duck fat

  • 1/4 cup kosher salt

  • 1 tablespoon white peppercorns, lightly crushed

  • 2 teaspoons juniper berries, slightly crushed

In a small bowl, mix thyme leaves, bay leaves, kosher salt, white peppercorns and juniper berries together. Rub the mixture evenly on the duck leg. Cover and refrigerate overnight to marinate. When ready, melt the duck fat on high in a slow cooker. Rinse the duck legs under cold water and add to the slow cooker when the fat has melted. Cover and simmer for 4 hours on low, or until the meat is very tender. When it is cooked, remove the duck legs from the fat and let it cool. Return the legs to the fat when both are cooled and ready to serve.

Slow Cooked Pork Rillettes

What you need:

  • 1 1/2 pounds trimmed boneless pork, cut into 2-inch pieces

  • 10 thyme sprigs

  • 6 cloves of garlic, peeled and crushed

  • 4 cups rendered lard, melted

  • 1/4 cup Kosher salt

  • 2 teaspoons of all kinds of berries

  • 2 tsp black peppercorns

  • 1/2 tsp coriander seeds

  • 1/4 teaspoon cinnamon

Toasted baguettes and pickled apricots, to serve

Mix allspice, peppercorns and coriander seeds together in a spice grinder and grind to powder. Stir in 1/4 cup salt and cinnamon. Toss the pork in the spice mixture in a large bowl, then add the thyme and garlic to the bowl. Cover and refrigerate overnight. When ready, bring the pork to room temperature, then place it in a pan with the spices and pork fat. Partially cover and cook for 4 to 6 hours on low. When ready, transfer pork and garlic (discard thyme) to a bowl. Chop the pork and mash the garlic. Stir in 1 cup fat and season with salt. Serve with toasted baguettes and pickled apricots.
